This traditional Trdelník, also known as Chimney Cake, is a beloved Czech street food made by wrapping sweet dough around a wooden cylinder, roasting it over an open flame (or baking in an oven), and finishing it with a crunchy sugar and cinnamon coating. Often filled with Nutella, whipped cream, or ice cream. It gives you that golden, crispy, and caramelized crust with a soft, fluffy inside. Perfectly coated in cinnamon sugar, this Czech pastry is a must-try treat!
Ingredients
- For the Dough:
3 cups (360g) all-purpose flour
1/4 cup (50g) granulated sugar
1/2 tsp salt
1 packet (7g) active dry yeast
1/2 cup (120ml) warm milk (about 110°F/43°C)
1 large egg
3 tbsp unsalted butter, melted
- For Coating:
1/2 cup (100g) granulated sugar
1 tbsp ground cinnamon
2 tbsp unsalted butter, melted

Directions
- Step 1: Activate the Yeast
- In a small bowl, mix warm milk, sugar (1 tbsp from the ¼ cup), and yeast.
- Let it sit for 5–10 minutes until foamy.
- Step 2: Prepare the Dough
- In a large bowl, combine flour, salt, and the remaining sugar.
- Add the foamy yeast mixture, egg, and melted butter.
- Knead the dough for 8–10 minutes until soft and elastic.
- Cover with a kitchen towel and let rise for 60 minutes or until doubled in size.
- Step 3: Prepare the Wooden Mold
- While the dough is rising, wrap aluminum foil around the rolling pin (or a wooden dowel) and lightly grease it with butter.
- Step 4: Shape the Trdelník
- Preheat oven to 375°F (190°C).
- Roll out the dough into a ¼-inch thick rectangle.
- Cut into long strips (about ½ inch wide).
- Wrap the strips spirally around the greased rolling pin, overlapping slightly.
- Roll gently on the counter to press the layers together.
- Step 5: Coat & Bake
- Brush the dough with melted butter and roll in cinnamon sugar.
- Position the rolling pin over a baking sheet so the dough isn’t touching the tray.
- Bake for 15–20 minutes, rotating occasionally for even browning.
- Step 6: Serve & Enjoy!
- Once golden brown, remove the Trdelník from the rolling pin.
- Fill with Nutella, ice cream, or whipped cream for an extra indulgence!
