Take a delicious trip to Prague from your kitchen! This traditional Trdelník, also known as Chimney Cake, is a beloved Czech street food made by wrapping sweet dough around a wooden cylinder, roasting it over an open flame (or baking in an oven), and finishing it with a crunchy sugar and cinnamon coating. Often filled with Nutella, whipped cream, or ice cream. It gives you that golden, crispy, and caramelized crust with a soft, fluffy inside. Perfectly coated in cinnamon sugar, this Czech pastry is a must-try treat!

Ingredients

  • For the Dough:
  • 3 cups (360g) all-purpose flour

  • 1/4 cup (50g) granulated sugar

  • 1/2 tsp salt

  • 1 packet (7g) active dry yeast

  • 1/2 cup (120ml) warm milk (about 110°F/43°C)

  • 1 large egg

  • 3 tbsp unsalted butter, melted

  • For Coating:
  • 1/2 cup (100g) granulated sugar

  • 1 tbsp ground cinnamon

  • 2 tbsp unsalted butter, melted

  • Optional Fillings & Toppings:
  • Nutella

  • Whipped Cream

  • Ice Cream

  • Crushed Nuts

  • Caramel Sauce

Directions

  • Step 1: Activate the Yeast
  • In a small bowl, mix warm milk, sugar (1 tbsp from the ¼ cup), and yeast.
  • Let it sit for 5–10 minutes until foamy.
  • Step 2: Prepare the Dough
  • In a large bowl, combine flour, salt, and the remaining sugar.
  • Add the foamy yeast mixture, egg, and melted butter.
  • Knead the dough for 8–10 minutes until soft and elastic.
  • Cover with a kitchen towel and let rise for 60 minutes or until doubled in size.
  • Step 3: Prepare the Wooden Mold
  • While the dough is rising, wrap aluminum foil around the rolling pin (or a wooden dowel) and lightly grease it with butter.
  • Step 4: Shape the Trdelník
  • Preheat oven to 375°F (190°C).
  • Roll out the dough into a ¼-inch thick rectangle.
  • Cut into long strips (about ½ inch wide).
  • Wrap the strips spirally around the greased rolling pin, overlapping slightly.
  • Roll gently on the counter to press the layers together.
  • Step 5: Coat & Bake
  • Brush the dough with melted butter and roll in cinnamon sugar.
  • Position the rolling pin over a baking sheet so the dough isn’t touching the tray.
  • Bake for 15–20 minutes, rotating occasionally for even browning.
  • Step 6: Serve & Enjoy!
  • Once golden brown, remove the Trdelník from the rolling pin.
  • Fill with Nutella, ice cream, or whipped cream for an extra indulgence!
