Ingredients

  • For the Dough:
  • 3 cups (375g) all-purpose flour

  • 1 tablespoon vegetable oil (or cachaça for extra crispiness)

  • 1 teaspoon salt

  • 1 teaspoon baking powder

  • 1 tablespoon vinegar (white or apple cider)

  • 3/4 cup (180ml) warm water

  • For the Fillings (Choose One or Mix & Match!):
  • 1 Classic Ground Beef Filling:

  • 1/2 lb (225g) ground beef

  • 1/2 small onion, finely chopped

  • 1 clove garlic, minced

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon cumin (optional)

  • 1 tablespoon fresh parsley, chopped

  • 2 Cheese Filling (Pastel de Queijo):

  • 1 cup shredded mozzarella or queijo minas

  • 1/2 teaspoon oregano (optional)

  • 3 . Heart of Palm Filling (Pastel de Palmito):

  • 1/2 cup chopped heart of palm

  • 1/4 cup cream cheese

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • For Frying:
  • 2-3 cups vegetable oil (for deep frying)

Directions

  • Step 1: Prepare the Dough
  • In a large mixing bowl, combine flour, salt, and baking powder.
  • Add the vegetable oil (or cachaça), vinegar, and warm water. Mix until a rough dough forms.
  • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  • Cover with a damp cloth and let it rest for 30 minutes.
  • Step 2: Prepare the Fillings
  • Ground Beef Filling:
  • Heat olive oil in a pan over medium heat.
  • Add chopped onion and garlic, sautéing until fragrant.
  • Stir in the ground beef, salt, black pepper, and cumin. Cook until browned.
  • Remove from heat, stir in fresh parsley, and let it cool.
  • Cheese Filling:
  • Simply mix the shredded cheese with oregano if using.
  • Heart of Palm Filling:
  • Mix the chopped heart of palm with cream cheese, salt, and black pepper.
  • Step 3: Assemble the Pastéis
  • Roll out the dough very thin (about ⅛ inch thick).
  • Cut into 4×6-inch rectangles or use a round cutter for a traditional look.
  • Place 1-2 tablespoons of your chosen filling in the center of each dough piece.
  • Fold the dough over the filling, pressing the edges to seal.
  • Use a fork to crimp the edges for a tight seal.
  • Step 4: Fry the Pastéis
  • Heat the vegetable oil in a deep fryer or large pan to 350°F (175°C).
  • Carefully drop 1-2 pastéis at a time into the hot oil.
  • Fry for 2-3 minutes per side or until golden and crispy.
  • Remove with a slotted spoon and drain on paper towels.
