Lu Rou Fan (滷肉飯) is a classic Taiwanese comfort dish featuring tender, braised minced pork simmered in a flavorful soy-based sauce, served over a steaming bowl of rice. This dish is a staple in night markets and home kitchens, known for its deep umami flavors, slightly sweet caramelization, and melt-in-your-mouth texture. The secret? Slow braising with aromatic spices and a rich soy sauce mixture that transforms simple ingredients into a mouthwatering delight.
Pair it with a soft-boiled soy-marinated egg and some pickled mustard greens for the ultimate Taiwanese experience!

Ingredients

  • For the Minced Pork Braise
  • 1 lb (450g) ground pork (or finely minced pork belly for extra richness)

  • 1 ½ tbsp neutral oil (vegetable, canola, or peanut oil)

  • 3 cloves garlic, minced

  • 1 small shallot, finely diced

  • 2 tbsp shaoxing wine (or dry sherry)

  • 3 tbsp soy sauce

  • 1 tbsp dark soy sauce (for color & depth)

  • 1 tbsp oyster sauce

  • 1 tbsp rock sugar (or brown sugar)

  • 1/2 tsp five-spice powder

  • 1/2 tsp tsp white pepper

  • 2 cups water or chicken broth

  • 2 small dried shiitake mushrooms, rehydrated & minced (optional, for extra umami)

  • 1/2 block firm tofu, cut into cubes (optional)

  • For Serving
  • 4 servings steamed white rice

  • 2 soft-boiled or braised eggs (optional, see notes)

  • 1/2 cup pickled mustard greens (for balance)

  • 2 stalks scallions, chopped (for garnish)

Directions

  • 1️⃣ Sauté the Aromatics
  • Heat oil in a large pot over medium heat.
  • Add minced garlic and shallots. Sauté until fragrant and golden (about 2 minutes).
  • 2️⃣ Brown the Pork
  • Add ground pork, breaking it up with a wooden spoon.
  • Cook until no longer pink and slightly caramelized (5-7 minutes).
  • 3️⃣ Add Seasonings & Simmer
  • Stir in shaoxing wine, soy sauce, dark soy sauce, oyster sauce, rock sugar, five-spice powder, and white pepper. Mix well.
  • Pour in water or broth and bring to a boil.
  • Add rehydrated shiitake mushrooms and tofu cubes (if using).
  • Reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally.
  • 4️⃣ Prepare the Soft-Boiled Eggs (Optional)
  • Bring a small pot of water to a rolling boil.
  • Carefully add eggs and boil for 7 minutes for a jammy yolk.
  • Transfer to an ice bath for 5 minutes, then peel and set aside.
  • You can marinate them in soy sauce for extra flavor.
  • 5️⃣ Assemble & Serve
  • Spoon the savory minced pork sauce over hot steamed rice.
  • Top with soft-boiled egg, pickled mustard greens, and chopped scallions.
  • Enjoy warm with a drizzle of extra sauce!
