Ingredients

  • For the Filling:
  • 1 lb (450g) beef or pork sausage meat (or a mix of both)

  • 1/2 cup breadcrumbs (panko or regular)

  • 1 small onion, finely chopped

  • 1 small carrot, grated

  • 1 clove garlic, minced

  • 1 tsp Worcestershire sauce

  • 1 tbsp tomato sauce (ketchup)

  • 1 tsp Dijon or yellow mustard

  • 1 tsp dried thyme (or 1 tbsp fresh thyme, chopped)

  • 1 tsp dried oregano

  • 1 tsp salt

  • 1/2 tsp black pepper

  • For the Pastry:
  • 2 sheets frozen puff pastry, thawed

  • 1 egg, beaten (for egg wash)

  • 1 tbsp milk (for egg wash)

  • 1 tbsp sesame or poppy seeds (optional, for garnish)

Directions

  • Step 1: Prepare the Filling
  • Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
  • In a large mixing bowl, combine the sausage meat, breadcrumbs, chopped onion, grated carrot, garlic, Worcestershire sauce, tomato sauce, mustard, thyme, oregano, salt, and pepper.
  • Mix thoroughly using your hands or a spoon until well combined.
  • Step 2: Assemble the Sausage Rolls
  • Place the thawed puff pastry sheets on a lightly floured surface. Cut each sheet in half to make 4 rectangles.
  • Divide the sausage mixture into 4 equal portions and shape them into long logs.
  • Lay a sausage log down the center of each pastry rectangle.
  • Brush one edge of the pastry with the beaten egg wash, then fold the pastry over the sausage filling to enclose it. Press the edges together to seal.
  • Use a fork to crimp the edges slightly for a decorative touch.
  • Cut each roll into 4 smaller pieces (or keep them larger if you prefer).
  • Step 3: Baking the Sausage Rolls
  • Place the sausage rolls onto the prepared baking tray, seam side down.
  • Brush the tops with the remaining egg wash and sprinkle with sesame or poppy seeds for extra crunch.
  • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed up.
