The pancakes are soft, slightly chewy, and subtly sweet, making them the perfect vessel for the rich and earthy sweetness of the azuki bean paste. Ingredients

  • For the Pancakes:
  • 2 large eggs

  • 1 ½ tablespoons water

Directions

  • Prepare the Pancake Batter
  • In a mixing bowl, whisk together the eggs, sugar, honey, and vanilla extract until light and frothy.
  • Sift in the flour and baking powder, then gently whisk until smooth.
  • Add 1 ½ tablespoons of water and mix until fully combined. The batter should be thick but pourable.
  • Cover and let the batter rest for 15 minutes to ensure fluffier pancakes.
  • Cook the Pancakes
  • Heat a non-stick frying pan over medium-low heat. Lightly grease with a small amount of vegetable oil, then wipe away any excess with a paper towel.
